Easter Cake

I've been loving all things coconut lately, 
so when my friend Charis asked me to make a 
dessert for Easter I knew a coconut treat was in order. 

I decided on Martha's 
AND I made it into a Rainbow Cake!
Aqua
Pink
Green 
Yellow
With homemade lemon curd &
One last picture I've titled, 
Cake at Sunset.

I LOVE when desserts taste good and 
look ADORABLE.

    Sometimes I like to imagine what the happier things in life would taste like. Most often those happier things in life would taste like the way that this cake looks. It looks like it would taste of rainbows and butterflies, confetti and smiles, joy and frolicking in flowering fields.

    Great cake.
